Experience Kō at the Fairmont Kea Lani

Our family recently visited the posh Fairmont Kea Lani on the island of Maui, and were just as impressed as our first stay in Wailea last year. The Fairmont Kea Lani is the only, all-suite and villa luxury oceanfront resort on Maui, and the beautiful architecture and decor and stunning location make it a wonderful choice for families looking for a little something different from an island destination resort. The new restaurant, Kō was not open yet on our last visit, so I was so excited to get a chance to taste some of Maui’s finest recipes inspired by Hawaii’s sugarcane plantation era.

Kō’s claim to fame is as the only fine dining restaurant on Maui to offer cuisine inspired by the sugarcane plantation era. The restaurant recently underwent a $5.1 million dollar renovation and is led by Executive Chef Tylun Pang and nearly everything on the menu is sourced from Maui. The menu features island family recipes passed down from generations of Hawaiian, Chinese, Filipino, Portuguese, Korean and Japanese families and offers a contemporary twist to many wonderful dishes. We kicked off the meal with a signature Pomegranate Mint Mojito, followed by the Mauka Salad with greens grown on Maui. What is dinner without desert?

In addition to their regular menu, Kō also has Winemaker pairings which feature a three course meal of Chef Pang’s favorite dishes paired with three stand-out wines from a featured winemaker. On Sunday nights, they offer a modern and healthy take on the traditional Hawaiian dish LauLau which often sells out!
